I love pizza, and I love casserole, so it only makes since that when combined, these two great food loves equate to one fantastically tasty treat.  And what I love just as much as the great taste, is the fact that this dish requires few ingredients and minimal effort.  Now that's what I call dinner made simply delicious! 

Pizza Casserole
Total Time: 40-45 minutes
Prep: 15 minutes
Cook: 25-30 minutes

What you'll need

1 cup uncooked egg noodles
1 jar (about 3cups) pizza sauce or any tomato sauce you prefer
1 1/2 cups shredded mozzarella cheese
1/2 pound Italian Sausage
handful of pepperonis (optional)

Directions:
1. Pre-heat oven to 350 degrees F.  
2. Cook noodles according to package directions.  
3. While noodles are cooking, brown Italian sausage in a medium skillet.
4. In a small baking dish, layer the bottom with pizza sauce.  Then, layer with noodles, sauce, sausage, cheese and repeat until you reach the top of the dish. 
5. Top with one final layer of cheese and pepperoni slices.
6. Bake covered for 25 to 30 minutes or until bubbling.  
7. Serve with your favorite garlic bread and dinner salad.

Friday nights and pizza naturally go hand in hand.  So make it a pizza night with this over-the-top White Margarita Flatbread Pizza.  The layers of  fresh mozzarella, ripe tomatoes and hints of basil, all served over creamy light Alfredo sauce and a crispy crust, will have you wishing every night could be a Pizza, Pizza kind of night. 

What you'll need
pre-made pizza dough or homemade pizza dough 
light alfredo sauce (about 1 cup)
5-6 thin slices of mozzarella cheese
1 tomato, thinly sliced
4-5 fresh basil leaves
salt and pepper
Directions 
1. Preheat oven to 425 degrees F. 
2. On a lightly floured flat surface, roll dough into a thin, rectangular shape.  Pierce dough with a fork all around the surface to prevent dough from bubbling.
3. Place dough on a greased pizza pan.  Bake for about 10 minutes or until dough is lightly browned.
4. Carefully remove pan from the oven.  Spread a layer of light alfredo sauce over the top of the dough. 
5. Top with tomato and mozzarella slices.  Bake for 15 minutes or until cheese is melted and the crust is browned and crisp. 
6. Season with salt and pepper. Garnish with fresh basil leaves.  
7. Let cool for 5 minutes before serving.  Cut into square pieces.  Enjoy!

In less than 20 minutes, and with only four ingredients, you can create and enjoy homemade pizza rolls for two. 

I'm pairing these fantastic little pizza rolls with a Caesar salad topped with homemade croutons.  Making your own croutons is very easy to do, and it is a great way to use leftover bread.  



Pepperoni Alfredo Pizza Rolls
Total Time: 15-17 minutes
Prep: 5 minutes
Cook: 10-12 minutes

What you'll need
4 ounce can Pillsbury Original Crescent Rolls
4 tablespoons light creamy alfredo sauce
4 tablespoons shredded mozzarella cheese 
mini pepperonis 
salt and pepper 

Directions
1. Preheat oven to 375 degrees F.
2. Add 1 tablespoon of alfredo sauce to each crescent roll triangle. 
3. Top alfredo sauce with shredded mozzarella cheese and mini pepperonis.  Season with salt and pepper. 
4. Roll the crescent roll triangles, making sure to keep the stuffing securely within the dough. 
5. Bake for 10 to 12 minutes or until crescent rolls are lightly browned.
While the pizza rolls are baking you can assemble the Caesar Salad. 

Caesar Salad with Homemade Croutons
Total Time: 10 minutes
Prep: 5 minutes
Cook: 5 minutes

What you'll need
For the salad
1 romaine heart, chopped
3 scallions, chopped
2-3 tablespoons of your favorite Caesar dressing

For the croutons
2, 1-inch slices of a french baguette, cut into cubes (about 1/2 cup)
1 1/2 teaspoon butter
1 1/2 teaspoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic salt 
Directions
1. Heat butter and oil in a skillet over medium-high heat. Add bread cubes; cook stirring often for 3 to 4 minutes, or until bread cubes are lightly toasted.
2. Stir in paprika and garlic salt; cook for an additional 1 to 2 minutes.  Remove from heat.  Set aside.
3. In a medium mixing bowl, combine lettuce and scallions.  Top with homemade croutons. 
4. Add Caesar dressing as desired.  Toss well. 
5. Serve with Pepperoni Alfredo Pizza Rolls.  Enjoy!

If you are looking for a great appetizer idea for the holidays, look no more.  Here is a quick and easy recipe that will be sure to impress your guests. 

Won Ton White Pizza Cups
Total Time: 15 minutes
Prep: 5 minutes
Cook: 10 minutes

What you'll need
12 won ton wrappers, cut in half
12 tablespoons white alfredo sauce 
12 tablespoons mozzarella cheese 
mini pepperonis
salt and pepper
olive oil

Directions
1. Preheat oven to 375 degrees F. 
2. Grease a 12-cup-mini-muffin-tray.  Add two won ton halves to each cup by creating an X with the wrapper halves. 
3. Brush on a thin layer of olive oil over the tops of each won ton cup . 
4. Bake for 3 to 4 minutes. 
5. Remove from oven.  Add 1 tablespoon of white alfredo sauce to the inside of each cup.  Top with mozzarella cheese and mini pepperonis.  Season with salt and pepper. 
6. Bake again for 5 to 7 minutes or until cheese is melted. 
7. Serve and enjoy!

I'm so excited to share today's recipe for two with you.  It is sinfully delicious -- and for good reason -- it's pizza in a burrito.  Need I say more?

Mini Pizza Burritos
Total Time: 30 minutes
Prep: 15 minutes
Cook: 15 minutes



What you'll need
8 ounces ground Italian sausage (you can use lean turkey sausage if you want to cut down on fat and calories)
1 cup mozzarella cheese
1/2 onion, diced
1/2 bell pepper (any color), diced
4 tortilla shells (taco size)
4 tablespoons pizza sauce 

Directions 
1. Preheat oven to 350 degrees F.
2. In a medium skillet, sauté sausage over medium heat until it is cooked through, about 5 to 7 minutes.
*Note -- since I'm going to be using 1/2 pound of Italian sausage tomorrow night as well, I sautéed a pound of sausage to help cut down on prep work tomorrow.  I'll store the leftover 1/2 pound of cooked sausage in the refrigerator, and add it to tomorrow's dinner when it is needed.

3. Spread about 1 tablespoon of pizza sauce over each tortilla shell.
4. Top tortillas with sausage, onion, bell pepper and about 1/4 cup mozzarella cheese.
5. Fold up tortilla to form a burrito. 
6. Place the burritos on a baking sheet covered in foil.
7. Bake for 15 minutes or until shells are lightly toasted and the sauce is bubbling. 
8. Serve and enjoy!

Do you love the taste of pizza, but hate what it does to your waist line?  Well, now you can have it all  -- great tasting pizza, minus the extra lbs -- with today's recipe for two, Zucchini Pizza Boats. 

According to CalorieKing.com, 8 slices of homemade pizza crust will cost you the following:
• 674 calories
• 6.5 grams of fat
• 1174 milligrams of sodium (that's 49% of your daily value!!!)
• 131 grams of carbohydrates.  

Granted, you probably don't eat 8 slices of pizza in one sitting, but even if you had 4 slices you would still be consuming:
• 337 calories
• 3.25 grams of fat
• 587 milligrams of sodium
• 65.5 grams of carbohydrates.  

So just to burn off the crust in 4 slices of pizza you would have to walk for 93.5 minutes or jog for 38.5 minutes.  Yikes!

Alternatively, you could ditch the crust and replace it with zucchini! The nutritional difference is staggering.  
The breakdown for one zucchini is as follows:
• 2 calories
• .1 grams of fat
• 1 milligram of sodium
• .3 grams of carbohydrates. 

 I'm pretty sure you could burn that off just sitting in front of the TV.

If you are skeptical of how a zucchini based pizza would taste, don't worry, so was my husband.  When I told him we were having zucchini pizza boats for dinner, his response was, "Maybe you should put a real pizza in the oven for me."  In the end, he pushed his negative thoughts aside and gave the pizza boat a try.  And much to his surprise, he actually enjoyed them.  In the game of marital disagreements, I'm pretty sure that's 1 point wife -- 0 points husband : -)

Zucchini Pizza Boats
Total Time: 30 minutes
Prep: 10 minutes
Cook: 20 minutes

What you'll need
2 zucchinis
1 cup pizza sauce
fresh mozzarella cheese
your favorite pizza toppings 
Italian style bread crumbs 
salt and pepper 

Directions
1. Preheat oven to 425 degrees F. 
2. Slice both zucchini's lengthwise.  Using a spoon, scoop out the flesh from the center, leaving about 1-centimeter of zucchini around the edges. 

3. Place the scooped out zucchini halves on a baking sheet covered in aluminum foil. 
4. Add about 2-3 tablespoons of pizza sauce to each zucchini half. 
5. Top with mozzarella cheese and your favorite pizza toppings (I use pepperoni since I had leftover slices from Tuesday's dinner). 
6. Sprinkle breadcrumbs over the cheese and pepperoni.  Season with salt and pepper. 
7. Bake for approximately 20 minutes or until cheese is melted.  Serve and enjoy!

In the O'Dempsey household it's definitely a pizza and a movie kind of Friday night.  However, instead of reaching for the pizza delivery number, I'm keeping things homemade with this easy french bread pizza recipe.  Not only can you make it as fast as you can say pizza, pizza, but it's a great way to use some of the leftover vegetables that you may have in your refrigerator. 



Vegetable French Bread Pizza
Total Time: 20 minutes
Prep: 5 minutes
Cook: 15 minutes

What you'll need
3/4 french bread loaf, halved
3-4 tablespoons pizza sauce
2-4 ounces fresh mozzarella cheese
1 tomato, diced
1/2 bell pepper (any color), diced
1/2 cup baby spinach, washed and stems removed
1/4 small onion, diced
1 clove garlic, minced
salt and pepper
red pepper flakes (optional)
parsley (optional)

Directions
1. Preheat oven to 350 degrees F.
2. Spread about 2 tablespoons of pizza sauce over each french bread loaf.
3. Add diced tomatoes, bell pepper, onion and spinach.

5. Season with salt and pepper.
6. Transfer french bread to a baking pan covered in aluminum foil.
