Mini Pizza Burritos

What you'll need
8 ounces ground Italian sausage (you can use lean turkey sausage if you want to cut down on fat and calories)
1 cup mozzarella cheese
1/2 onion, diced
1/2 bell pepper (any color), diced
4 tortilla shells (taco size)
4 tablespoons pizza sauce
Directions
1. Preheat oven to 350 degrees F.
2. In a medium skillet, sauté sausage over medium heat until it is cooked through, about 5 to 7 minutes.
*Note -- since I'm going to be using 1/2 pound of Italian sausage tomorrow night as well, I sautéed a pound of sausage to help cut down on prep work tomorrow. I'll store the leftover 1/2 pound of cooked sausage in the refrigerator, and add it to tomorrow's dinner when it is needed.
6. Place the burritos on a baking sheet covered in foil.
