Beef Stroganoff

Ingredients
  • 1/2 pound beef filet or sirloin (prime), cut into thin strips
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1 teaspoon Worcestershire sauce
  • 3/4 cup sour cream
  • 1 cup white, brown or wild rice, cooked
  • salt and pepper
Directions
1. Melt 2 tablespoons butter and 1/2 tablespoon olive oil (to keep from burning) in a medium sized skillet. 
2. Add beef strips very quickly, browning both sides. Approximately 2 minutes.
3. Remove meat and place on a side plate.  Add remaining oil to the skillet. 
4. Saute onions until they cook down. 
5. Add Worcestershire sauce and sour cream. Heat on low, stirring occasionally for a couple of minutes.  Do not let sour cream boil (it will curdle -- not good). 
6. Return beef strips to the skillet. Season mixture with salt and pepper. 
7. Serve over rice.
