Garlic Shrimp Salad

Ingredients
  • 1/2 pound medium shrimp, peeled and deveined
  • 6 thin asparagus stalks, cut into 1-inch pieces
  • 1 medium tomato, diced
  • 3 cloves garlic, chopped
  • 1 tablespoon olive oil 
  • lettuce
  • salt and pepper
Dressing 
  • 2 teaspoons vegetable oil
  • 1 teaspoons balsamic vinegar
  • 1 clove garlic, crushed with a garlic press
  • 1/2 lemon, juiced
  • salt and pepper 

Directions
1. In a medium mixing bowl add shrimp, olive oil, garlic, salt and pepper.  Mix well. 
2. Add shrimp and asparagus to a medium skillet; saute over medium heat, turning frequently until the shrimp turns pink and asparagus is tender, about 3 to 4 minutes.
3. In a small mixing bowl, mix together dressing ingredients. 
4.  Place lettuce and tomato on 2 salad plates.  Top with shrimp and asparagus. 
5. Drizzle dressing over salad as desired.
