Mexican Lasagna
Serves: 2 (generously)
Ingredients
Directions
1. Preheat the oven to 375 degrees F.
2. Add ground turkey to a medium skillet over medium heat. Continue to break down meat into small pieces until meat is no longer pink.
3. Add 1/2 packet of taco seasoning and 1/2 cup of water to skillet. Stir until seasoning is completely absorbed by the meat.
4. Cover the bottom of a 9 x 9 x 2 rectangular baking dish with a thin layer of salsa.
5. Place one large tortilla over the salsa.
6. Add a layer of taco meat over the tortilla.
7. Sprinkle a layer of cheese over the taco meat.
8. Place another large tortilla over the cheese.
9. Continue to layer until you reach the top of the baking dish.
10. Cover the baking dish with aluminum foil and place it in the oven for 30 minutes or until salsa and cheese are bubbling.
* Tip -- if you have leftover onion or green pepper you can also dice the pepper and or onion and add them to the ground turkey as it is cooking.
