Sausage, Onion, Roasted Red Pepper and Garlic Pizza

Serves: 2 (generously)
Ingredients
Pizza Dough
  • 2-3 cups all-purpose flour 
  • 1 package active dry yeast
  • 1/2 teaspoon salt
  • 1 cup warm water 
  • 2 tablespoons olive oil
Toppings
  • 13 ounce jar pizza sauce
  • 1/2 small sweet or red onion, diced
  • 1 cup roasted red peppers, diced 
  • 2 italian sausages, remove skin and form into quarter size meat balls
  • 2 cloves garlic, chopped
  • 2 cups mozzarella cheese

Directions
1. In a large mixing bowl combine 1 cup of flour, yeast and salt; add warm water and oil.  
2. Beat with an electric mixer on low speed for 30 seconds.  Then, beat on high speed for 3 minutes. 
3. Using a wooden spoon add in as much of the remaining flour as you can. Mix well with spoon. 
4. Turn dough out onto a lightly floured surface.  Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic.  Place dough in a medium size bowl and cover with a towel for ten minutes. 
5. Preheat oven to 425 degrees F.  Grease 12 inch pizza pan.
6. On a lightly floured surface, roll dough into a 13 inch circle.
7. Transfer dough circle to the greased pan.  Build up edges slightly; prick dough with a fork all around the surface to prevent dough from bubbling. 
8. Bake for about 10 minutes or until dough is light brown.
9. Spread pizza sauce onto hot crust.
10. Top with onion, roasted red pepper and uncooked sausage.
11. Spread desired amount of mozzarella cheese over toppings. Sprinkle fresh garlic over cheese.  Add salt and pepper as desired. 
12. Bake for about 20 minutes or until cheese is melted and sausage is cooked through.
